Our café serves delicious gourmet espresso drinks and fresh baked goods from our own bakery. All of our coffees are fresh roasted in Hailey and our bakery is served fresh from the oven. Hailey Coffee Company roasting facility is located on River Street just across from the café. This enables us to provide fresh roasted beans to our café and to the Wood River Valley. Fresh roasted beans, superior roasting techniques, a demand for quality, and a well-trained staff are some of the components that we believe truly create “the cup of the valley”. The Wood River Valley agrees we are the Cup of the Valley, as they have nominated and awared us the Wood River Journal's Cup of the Valley award in 2006 and 2007. Hailey Coffee Company is committed to the community and the environment. We are also conscious of the individual involved in the coffee growing regions around the globe. We sell a large assortment of organic coffees, which are also "bird friendly", "shade grown", and "fair trade". We feel that our responsibilities extend beyond our doors and we are committed to propagating respect and integrity in all corners of the coffee world. ROASTING Hailey Coffee Company roasting facility is located at 308 S. River St. in Hailey. Our beans are roasted four to seven days a week depending on demand. At Hailey Coffee Co. we use a Sivetz Fresh-Air Roaster. We believe it is the most advanced technology in roasting today. We have chosen this type of roaster because it uses hot air, as opposed to a hot surface used in the more conventional cylinder roasters, to roast the beans. The use of fresh air to roast coffee produces a “cleaner” (less tars), and more even roast on the bean. This design allows full development of the coffee’s flavor. Each roast is calibrated to the exact degree of perfection, and each coffee is roasted and blended to enhance its unique characteristics. FREEZING When purchasing your coffee beans from Hailey Coffee Company you won’t find them stored on a shelf or in bins. We freeze all of our roasted coffee. Freezing our coffee sets us apart from other roasting companies. We place all of our beans in the freezer shortly after roasting so the staling process does not begin before the customer purchases the coffee. The staling process occurs at room temperature regardless of how the coffee is packaged. Packaging alone cannot preserve the freshness. All of our whole beans are stored in a freezer within the café and in our roasting facility. We recommend to our customers that freezing their whole beans or fresh ground coffee is the best method to preserve the freshness. CERTIFIED ORGANIC Most of the beans Hailey Coffee Company uses in the roasting process are certified organic and fare trade.
