Goat Meat (Chevon) Pasture-raised & LEAN red meat. Free-range chicken eggs seasonally. About Us Chevon - gourmet goat meat Goat meat has less fat than skinless chicken and yet has all the protein of beef. It is lean and tender and delicious. You will love the mild flavor and clean mouth feel, and high in omegas, high in iron. We have been raising Boer goats in the Hagerman Valley for six years. Boer goats are the preferred breed for Chevon.We sell USDA inspected chevon at the farm from our freezer cases, online, and to restaurants. As an alternative to USDA inspected, we can deliver a butcher-ready wether to a butcher in Hagerman for you to pick up. We are members of Idaho Preferred & are certified by Animal Welfare Approved. Restaurants in Nampa, Twin Falls and Wood River Valley have served or are serving our chevon. Our farm has been featured in several newspapers, a food blog, we've been interviewed by Farm Talk Radio in North Dakota and by Guy Hand for Boise's national public radio weekly food show. In September 2011 we held an open house (grant-funded) to educate visitors about goat meat and goat ranching. A local chef prepared 6 goats in four recipes for visitors to try. About 175 people attended; toured the farm and tried chevon. Our hens enjoy freedom, healthy GMO free and organic feed, and sunshine. We have about 23 hens; (no roosters) Rhode Island Reds, Barred Rocks, Americaunas, Buff Orpingtons, and Black Australorps. Our goats enjoy a variety of pasture grasses. Our pastures are unsprayed. We grow our own grass/alfalfa mix and our hay fields are unsprayed and are fertilized only with our own compost.. We supplement with non-GMO, organic pellets. We fertilize our fields with composted manure only. We buy grass/alfalfa and alfalfa hay from local ranchers to supplement what we grow. The animals we select for USDA butcher are not given hormones, and are only given antibiotics when absolutely necessary for their well-being. Our chickens are fed from the garden and orchard, and have free access to a large pen under the trees. We also feed them our own grass and our own alfalfa. Additional Information USDA processing is done in Nampa, Idaho. We toured the facility (in caps and gowns) to see for ourselves that our goats are treated humanely and that the processing facilities are top-notch in terms of food safety and cleanliness. This facility is Animal Welfare Approved. Our Chevon is available in fresh-frozen packages by the cut(bone-in or boneless rolled roasts, racks,chops, shanks, osso bucco, ribs, burger, sausage, kabobs, etc.) or place a custom order for half/whole, bundles, fresh or frozen. Goat meat is high in moisture and naturally tender. Use low heat, don't overcook. Chefs like to brush chops lightly with olive oil before grilling.
